They saw the huge potential of this particular area of the Maremma, the Colline Metallifere, mineral-rich hills that have been mined since Etruscan times.  Not the coastal lowlands one usually associates with the Maremma, the Colline Metallifere are located more inland, at altitude.  For example, Ampeleia's vineyards just outside the hamlet of Roccatederighi reach 600m.   This part of the Maremma has never been home to intensive agriculture, and it has some of the lowest population density in all of Italy.  In fact, the Colline Metallifere are a national park and also a UNESCO Global Geopark site. \u003c\/p\u003e\n\u003cp\u003eMarco Tait has been at the helm of Ampeleia since the very beginning. They painstakingly restored the 17th century winery that had been abandoned for 20 years, including its 200-year-old screw press. He says the key to all his wines is the vertical basket press he uses. This tool is like a modern re-imagining of an old manual screw press. After 15 years of working for wineries in the region, he scraped enough tanks and barrels together to begin his own cellar. Now he is cultivating ten different varietals in diverse soils near his home. Jerome is a large quet man, set on working hard to get the best he can from his domaine. He has a mind for organic practices and traditional wine making, along with a clever approach to his cuvee selection. Rather than selecting only from 'lieu dit' sites (named sites), he harvests by age of vine per each soil type. This way he can learn what each vine will bring to his cellar as they come to age. He replants by massale selection to keep his clones growing in their rightful home and knows his two best soils are hiding right beneath his feet: gabbrox from ancient volcanic activity (very raw in texture in the wine) and older granite\/schist (for a rounder expression) are his two priorities. Before starting the winery, Eduard made conventional wine with his father in Styria, and Stephanie’s family owned and operated the Michelin starred restaurant Taubenkobel. They painstakingly restored the 17th century winery that had been abandoned for 20 years, including its 200-year-old screw press. The vines’ 20-year period of neglect was fortunate, as this allowed for all pesticide and chemical treatments to be washed away. The children, Atanasius, Theodora, and Winifred, are wines that are more forthright, light, bold and energetic. The parents, Joschuari, Emmeram, Timotheus, and Josephine, come from vineyards with a little more direct sun exposure and therefore more ripeness producing wines with more body and power. And finally the grandparents, Mechtild and Bertholdi, are from two single vineyards of older vines that produce the most traditional wines from their lineup.
