Vinification: Fermentation occurs with native yeasts in open-topped tanks with no temperature control and no sulfur. Maceration with skins is approximately 24 hours. The wine is pressed and aged on its fine lees in stainless steel for several months. It is racked, bottled and finishes fermentation in the bottle. It is not filtered and is topped with a crown cap. Laetitia Bullarum is a zero-sulfur wine.

Notes from the Importer: The historical archives of Cantina Fongoli represent a unique example of the history of bottling in Montefalco. Different types of paper, background colours and of course, the wording of the relevant laws on our wine labels represent political and socio-cultural changes as well as generational evolution. All these factors are united by the common thread of essentiality that over time has become one of the traditions of Cantina Fongoli.
