Since 2012, Julien Albertus of Kumpf et Meyer has been working biodynamically in his Alsace vineyards. He keeps busy with 16 hectares spread across 70 vineyards, some of which have been used for growing grapes since the 17th century. Always searching for new ways to express the full potential of his varietals as naturally as possible, Albertus makes his wine in a local cave on the outskirts of Rosheim—its cool climate perfect for production. Albertus’ high energy and enthusiasm for each of his terroirs directly informs this ‘Restons Nature’ Pet Nat made with Pinot Gris, Pinot Noir and the lesser known Auxerrois. Auxerrois, exclusive to Alsace, is an early-ripening progeny of Pinot and because of its gentle acidity, it’s often added to sparkling wines. In this Pet Nat, the grapes are directly pressed before fermentation with indigenous yeasts and then 12 grams of sugar are added at bottling. Unfined, unfiltered, without added sulphites.
