Vinification: Hand-harvested mid-September, the grapes are sorted then directly pressed whole-cluster to preserve their aromatics. A short, cold-temperature alcoholic fermentation starts, then half-way through the wine is bottled, to gain the natural carbonation.
Aging: 6-8 months in bottle before being disgorged

Notes from the Importer: Damien and Coralie Delecheneau are revolutionizing winemaking at Domaine La Grange Tiphaine, an estate that began as a family farm in the 1850s and is home to the Delecheneau family since five generations. They met in Bordeaux while studying oenology. Their studies took them to Napa Valley and South Africa, before Damien returned to the family's Touraine estate in Amboise in 2002. Together, they have converted their vineyard to biodynamics.
