Notes from the Importer: Canon is our decomplexed vision of a local traditional place where wine is produced...It is our imaginery "château" ! Canon has a complex and rich identity, without any look-a-like blend: the taste is that of the vineyard's spirit where the grand father managed his plots of complantation and agroforestry. White and Red mixed together sets the tempo with notes of red fruits and surprising white-fleshed fruits. Short maceration, six months in old oak barrils, the presence of the white grapes results in a well-balanced wine between freshness and tannic powers, drinkable from its' youngest age.
Laurent Bordes and Annica Landais-Haapa are the newest urban winemakers, travelling the vineyards of France in the quest for good grapes. Their project is called Les Chais du Port de la Lune, Port of the Moon’s Cellars, first cellar to vinify, press and mature wines in the City of Bordeaux since a long time. Their ambition is to create unique wines, paying homage to their partner vine growers as well as the origins of the grapes. Their installation of their steel tanks and barrels in an old renovated bunker in the area of Bacalan in the North of the City. Three vintages have been maked since the launch of this project. Organic grapes and and natural wine only!
