Notes from the Importer: Guillaume & Charles Soulier come from a wine-growing family but started in 2015, after acquiring 8ha in the Gard. Since then the brothers have purchased and planted more vineyards, now working with 10ha. All work in the vineyard is done by hand or with a horse, biodynamic farming and the same philosophy in the cellar.
Their cellar is a few steps down the street from their winery in the small Roman village of Saint-Hilaire-d’Ozilhan. Guillaume primarily handles vineyard work, Charles primarily handles vinification. No machines are used at the domaine, meaning nothing is pumped, and everything is hand-pressed with an old vertical press.
