Notes from the Importer: After having cut his teeth in prestigious estates (Mark Angeli, Gonon, Chandon de Briailles), in 2017, Jonathan settled down at Puy Notre Dame by taking over 5 hectares. He mainly cultivates Cabernet-Franc with a small plot of Cabernet-Sauvignon, Pineau d'Aunis and Chardonnay.
All this vineyard had already been worked in organic farming for 20 years. Jonathan Maunoury extends this approach by converting the estate to biodynamics. In order to fertilize the soil, to enrich it with nitrogen, he planted green manure made from fava beans. The soils are worked at the interceps.
Located mainly around the hill of Puy Notre Dame, it benefits from attractive terroirs where the Turonian limestone is less than 30 cm from the ground, windy plots and a micro-climate favor the maturity of the grapes.
In the cellar, Jonathan is very little interventionist. Precise and meticulous, he seeks to make pure wines by limiting the doses of sulphites (see no longer putting them in the spring vintages).
