Vinification: Grapes are hand-harvested, direct-pressed into concrete tank, and fermented using native yeasts.
Aging: The wine is aged in cuve on the lees and bottled unfined, unfiltered with little to no SO2.

Notes from the Importer: Steven Graf calls this wine the "perfect winter white." Medium bodied with sharp acidity. Notes of vanilla bean custard, toasted-almond and apricots, with a hint of that lees age coming through with a richness in body and a subtle oxidation. Perfect for winter indeed.
