Grapes: Apples from Normandy
Vinification: For this cider, the apples are purchased in cider country (Normandy, Northern France) and shipped to the Auvergne. The apples are sourced from an organically farmed orchard sans treatment and eco-grazed by sheep. Apples are directly pressed upon arrival. Spontaneous fermentation after a short rest takes place once enough oxygen is deprived.
Aging: Bottled at "low density," the fermentation continues in-bottle which creates both the opacity and some slight bubble.
