Notes from the Importer: Based in the northern French region of Lorraine, Stéphane works a miniscule 1.5ha of vines close to his family home and cellar in Mont-le-Vignoble. Despite being sandwiched between Alsace and Champagne, Stéphane’s home region has no celebrated wine tradition, a fact he is adamant will change within the next few years. With temperatures increasing across France, these once unheralded areas are now becoming a much desired environment for viticulture.
Whether in the vineyard or cellar, intervention is kept to a minimum — his pinot noir and gamay vines are all planted on clay-rich soils, with the land worked by hand or horse depending on the gradient of the slope. In the cellar most macerations are done in whole bunches whether white or red and no additions of any kind are made at any point in the vinification. Although not from particularly old vines, the wines have a depth that belies their youth. The pet’ nat’s offer something a little more fun, but all the wines have the perfume and acid profile that we so love in these varieties. Only starting his winemaking journey in 2015, we are incredibly excited to see where he goes in the next few years.
**Opening Note
Store upright for at least 3 days. Cool it in the fridge for 24 hours in standing position. Before opening, put it in the freezer (still standing) for 1 hour. Maybe open it outside, this is some explosive juice!
