Vinification: The grapes were harvested by hand, direct pressed and then underwent natural fermentation in stainless steel tanks.
Aging: After fermentation was complete, half of the juice was transferred to old 600 litre barrels. The juice was transferred back to the stainless steel tank one month before bottling.

Notes from the Importer: This is Catherine's opulent and powerful Savagnin made in the non-oxidative style from grapes grown in the highly regarded Sous Roche vineyard near Pupillin. Burgundy-esque with pastry, hazelnut and exotic spices featuring on the nose and palate with a core of apple and citrus fruit creating a long and precise finish.
