Buvons is a women-owned natural wine bar, restaurant, and bottle shop in Long Beach, California, focused on small-production wines you won’t find just anywhere—from Jura to Champagne to Burgundy and beyond. Our food is French-Mediterranean with a fresh California kiss. Come sip with us, stay for a meal, join a tasting, or take a bottle home.

Winemaker deep dive x antoine chevalier
Champagne Antoine Chevalier comes from the little-known Coteaux Vitryats, a tiny sub-region of Champagne about an hour from Reims and Épernay that was once historically significant but largely disappeared after phylloxera. Today the area is dominated by limestone-rich hillsides planted almost entirely to Chardonnay, which gives the wines their distinctive chalky minerality. Antoine Chevalier began estate bottling in 2016 on his family’s 2.5-hectare vineyard, farming naturally and crafting single-vineyard, single-vintage Champagnes with minimal intervention. His small-production wines highlight the potential of this overlooked corner of Champagne and are quickly gaining attention for their precision and depth.
