Vinification: Grapes are hand-harvested and fermented whole cluster with wild yeasts. After a short maceration, the wine is separated from the skins before any color can be imparted and racked into concrete, where it spends a few months resting.

Notes from the Importer: This pet-nat is the beverage equivalent. Saumur-based natural wine darlings Sebastien Bobinet and Emeline Calvez have teamed up with longtime friend and grower Bruno Richard to produce organic sparkling wines with zero additions. These joyous pet-nats (short for pétillant naturel - sparkling wine made with only one fermentation finished in bottle) are a literal and nostalgic nod to summers enjoyed through the lens of vintage, rose-coloured glasses. The Summertime project began in 2021 and has produced two bottlings so far, both named after Quebecois singer Isabelle Pierre’s infamous song ‘Le Temps Est Bon’ - a true folk classic celebrating the carefree ethos of the 1960s. Le Ciel Est Bleu is a whispering, purple-hued gulp of blueberry yoghurt topped with wild blueberry compote, bruised macintosh, lilac breeze, melting lemon ice, rosemary salt & a warm sewing machine putting on a fresh zipper. With its cheeky namesake, this should be the official beverage of Coachella’s VIP area. Pair with daisy crowns and boho mesh while holding hands with your two best friends. Isabelle Pierre sums it best, “Le temps est bon, Le ciel est bleu, J’ai deux amis qui sont aussi mes amoureux.” ;)
