Vinification: Direct press, then fermented in barrels. Aged for 11 months in semi-muids and 6 months in barrels, then 2nd fermentation is started.

Notes from the Import: Amaury Beaufort is one of the six children of Jacques Beaufort, an organic pioneer in Champagne. This has provided him with an impressive insight into organic viticulture, which is complemented by winemaking education from the University of Beaune. In order to better express his personality, he leaves the family estate and creates his own structure in 2018. Les Jardins 2018 is born on a plot of less than one hectare in POLISY “Le Jardinot”, on the Côte des Bar.

Since 2018 he has been working alone, which allows him to control all the work, dedicating himself only to his hectare of vineyard. It is a garden, he works with a light tractor to regulate the vegetation cover, and when the pruning season arrives, he reinstalls the extensions in the stakes, so that they hardly need to be cut, and have a height greater than 2 meters, which allows for better maturation and sugar concentration.

You have recently found that the more foliage there is, the more roots there are (as in trees: the crown surface transposes to the root). Who says more foliage, says more minerality, and in any case, it shows.

In winemaking, due to its proximity to Burgundy, there has always been a Burgundian bent, which is undoubtedly reflected in its wines, which come from a kimmeridgien clay-limestone terroir.

Quite fascinating, juxtaposing quite exotic fruit with an invigorating mineral character. The nose and palate are awash with yellow flowers, stone fruit and pineapple, while the finish is intensely chalky, with the coolness of limestone adding length to the all-important acid structure.
