Vinification: The wine was fermented semi-carbonically in whole-clusters for 50% of the grapes at very low temperatures for six days. They kept racking the juices forming at the bottom to encourage intra-cellular fermentation in order to have a pure juice, delicate and only lightly extracted.
Aging: 8 months in concrete vats

Notes from the Importer: Bulbille came from Claire Richaud to have an experimental cuvée to learn from with the ultimate goal to making fresh wines even in very warm climates. "The grapes are harvested slightly early to conserve a maximum of acidity present at the very beginning of a harvest and to find freshness in years of drought. This is largely why we have chosen to incorporate Counoise to the blend, an indigenous varetial worked little in our cellar but chosen for its fruit and low yields. It also blends excellently with Grenache and Syrah. One gram of S02 (10 mg/L) was added at bottling.
