Vinification: Fruit is pressed in an antique Coquillard press purchased from Champagne. Juice goes directly to old barrel for primary fermentation, malo and aging. Winemaking is reductive with very little to no racking. No batonnage.

Notes from the Importer: Domaine de Chevillard, nestled in the foothills of the French Alps, is the vision of Matthieu Goury, a Savoie native from a long line of farmers. Though his family never bottled their wine, Matthieu pursued viticulture and oenology, gaining experience in France, Australia, and Canada before founding his own estate in 2015.
Today, the domaine spans 10 hectares across multiple villages, with a deep commitment to organic and biodynamic farming. Guillemette, Matthieu’s wife, prepares plant-based treatments for the vines, and all work is done manually to ensure the highest quality fruit.
In the cellar, Matthieu follows a low-intervention approach—gentle pressing for whites, whole-berry maceration for reds, and minimal sulfur use. Wines age at least 24 months in used oak before bottling. His philosophy is simple: let the terroir shine. The result? Elegant, structured wines that capture the essence of Savoie.
