Vinification: Direct press, then bottled before fermentation is complete. Fermentation is finished in bottle, where the co2 is captured.

Notes from the Importer: Originally from the Auvergne, Julien Altaber started his career at the side of Dominique Derain in St. Aubin. Keen to produce his own cuvees, the two struck a deal, whereby Julien would continue to help Dominique, all while learning his trade, and in return, Dominque would help Julien source fruit + loan him the use of his cellar to produce his wines.
