Notes from the Importer: Domaine Olivier Horiot, with a vineyard area of about 8.5 hectares, is located in Côte des Bar, the southernmost area of Champagne, and more precisely in the Ricey village, where in addition to the AOC Champagne, 2 other appellations coexist -- Côteux Champenois and Rosé des Riceys.
Olivier has approached the principles of organic + biodynamic agriculture with a focus on the cycles of nature, without the use of harmful chemicals, futhermore, in the vineyards ploughing is carred out using horses to minimize environmental impacts.
Vinification is carried out by parcel in order to bring out the differences that each "lieu dit" translates to the palate.
