Vinification: 100% whole-cluster, 2-3-week ambient yeast fermentation and carbonic maceration in steel or wood tank, minimal extraction by wetting the cap with buckets and 2-3 foot treads near the end of fermentation, aged for 10-18 months in used barrels, blended in tank for 1 month, no fining, no filtration, SO2 only added before bottling (approx. 10 ppm).

Notes from the Importer: Bastian Wolber is known to be a prodigy in winemaking. While working with Ganevat, he injured himself falling off a skateboard, which led him to head back to his family's estate in Germany. He started there his own negociant project Laisse Tomber, which means "Let it be" more playful on words "Let it fall", an ode to his epic skating biff. He sources fruit across Europe, from Baden, to Savoie, Alsace and Burgundy. He moved to Burgundy and joined Jean-Yves Bizot's team while keeping his project to express his full creativity.
