Cédric started as a sommelier and caviste in Paris. Then he went home to Celles-sur-Ource, took over a single hectare of his father's vines, and did something nobody else in Champagne was doing: single vineyard, single variety, single vintage. No blending, no reserve wines, no house style to protect. Just one small parcel, one year, told straight.
Yields cut to a third of the regional average. Only the first pressing. Native yeasts. The result is Champagne that tastes more like a Burgundy grower's wine than a Champagne house's, dense and precise and unmistakably of one place.
He rewrote the rules for what grower Champagne could be. This is a rare chance to taste why.
