Vinification: Repos was made identically to all of the other wines: the whole bunches were direct-pressed very gently and the juice settled naturally in steel tanks overnight. The must was fermented spontaneously with indigenous yeasts and a small amount of sulfur.
Aging: The young wine was moved by gravity to underground, glass-lined cement tanks. After 14 months on the lees, the 2022 was bottled without filtration or any additional sulfur.

Notes from the Importer: Gras Moutons is a 1.7-hectare lieu-dit on a windy, south-facing slope in the Muscadet cru of Monnières-St. Fiacre. The sandy clay soils are rich in decomposed amphibolite (compacted sand) rocks and gneiss (granite metamorphized by pressure & heat).
