Notes from the Importer: Domaine Cabaret des Oiseaux is the creation of Jude and Lucile Spaety, both agricultural engineers. Jude worked for Celine from le Dolomies and this is how I was introduced to this exciting new producer located in Saint-Lothain since 2017.
Cabaret des Oiseaux is named after a plant that grows in their vineyards and which serves as a watering hole for the birds. Jude and Lucile cultivate two hectares of Pinot Noir, Poulsard, Trousseau, Chardonnay and Savagnin. They work their vineyards organically using animal traction and fermented plant extracts instead of copper and sulfur. No SO2 or additives of any kind are used in the cellar.
