Vinification: Grapes are hand-harvested, 90% of them are directly pressed and 10% are red grapes which macerate for 20 days (no real extraction) prior to pressing. Spontaneous fermentation in stainless steel and bottled just before the end of primary fermentation to capture CO2.

Notes from the Importer: Celler La Salada was set up by Toni Carbó to continue the work of his grandfather and father on land that has never been treated with synthetic products. In the winery, he works with minimal intervention and without adding wine products. This all results in wines that taste like the fruit and the terroir.
