Viticulture: Biodynamic, 1.7 hectare of land on the mountain of Beaune
Soils: limestones pebbles, red soil at the northern end and grey soil at the southern end
Vinification: ⅓ de-stemmed and macerated on the skins for 5 days in crates; ⅔ directly pressed with whole clusters in a basket press, ambient yeast fermentation with no added SO2, aged for 6-9 months in 350 L used barrels, minimal SO2 added after malolactic fermentation.

Notes from the Importer: The name "Les Horées" derives from Greek mythology. Catharina says there are many different interpretations, but she describes "Les Horées" as marking the change in seasons. The goddesses of the seasons are called "Horae" (hours).
