Vinification: The fruit is harvested manually and goes through a rigorous three-step sorting process. The clusters are gently and slowly pressed whole,and juice flows by gravity to tanks below. Fermentation is spontaneous with indigenous yeasts in tank and lasts 4 to 6 weeks. The wine is racked into old tonneaux and steel tanks for 2 to 3 months of aging on the fine lees, then 2nd fermentation is started.

Notes from the Importer: The wines of François and Julien Pinon are considered among the finest of Vouvray. François, a former child psychologist, took over the estate from his father in 1987, and has steadily made a name for the estate. He is a serious winemaker whose main focus is "to keep the typicity of both the appellation and the vintage" in all his wines. Julien's arrival has cemented the family's dedication to organic viticulture and minimal intervention winemaking.
